I think it's that by the time you finish a story you've been working on really hard, especially anything that's long and complicated, you've lost the ability to evaluate it.

This, exactly. By the time I'm finished writing I can no longer tell the difference between what's in my head and what's actually on the page. Thank god for betas and editors.
